Enban refers to the shape of the disk-shaped platter in which the gyoza are served. Different from typical Japanese gyoza, enban gyoza are particularly known for their delicious extra crispiness. The gyoza are arranged and cooked on a circular hotplate, and feature a variety of delicious vegetable fillings. There are several gyoza restaurants around Fukushima Station, through-out the city, and also in the Iizaka Onsen area.
